Hoegemeyer’s Barbeque tackles each catering head-on to satisfy the client’s needs - today we fed 125 veterans for an industrial client in their training facility. The best part was each veteran got three meats and three sides with a bowl of cobbler.
A client reached out to us wanting to put together a lunch for the Veterans on their crews and of course we obliged! This wasn’t the first time we’ve done catering in Gregory / Portland for an industrial client. In the past, we’ve fed anywhere from 15 individuals to hearty crews of 600! We brought our restaurant to their training site and set up shop providing three meat plates (brisket, turkey, and sausage) along with three sides (corn, baked beans, and our own baked tater salad) served up with a side of our almost famous peach cobbler. Not to mention we brought along tea for everyone to enjoy.

On Saturday Hoegemeyer’s donated a “19th Hole” snack bar for all of the participants in the Texas State Aquarium’s Rising Tide Society Putt-Putt Fundraiser. The snack bar itself was sponsored on behalf of the Law Office of Fontaine Gonzalez.
So, the Rising Tide Society (RTS) is comprised of young professionals committed to expanding conservation and awareness of the Texas State Aquarium and its mission. Members of RTS receive an intimate view of the Aquarium through exciting events (like the Putt-Putt fundraiser.) RTS benefits the Texas State Aquarium’s Wildlife Rescue Center.
Hoegemeyer’s Barbeque donated brisket along with veggie & cheese trays to help provide snacks for the ~180 attendees at the event. It was well attended, and all of the teams had a great time testing their luck throughout the 18 hole miniature golf course that snaked its way through the Gulf of Mexico and Caribbean Journey exhibits.
Palmilla Beach Birthday Catering in Port Aransas

Last Friday we had the great opportunity to cater a birthday out in Port Aransas at the beautiful Palmilla Beach Resort & Golf Course. It was a little windy and pretty cold (for south Texas standards) but we got all of their guests served and taken care of. This wasn’t our first catering in Port Aransas, but it was our first catering at Palmilla Beach. The great lawn they have available for events is absolutely amazing - super lush and soft grass that feels great underfoot.
We served up our delicious two meat bbq plates with two sides and iced tea (and we’ll bring the same to your event no matter where in south Texas you are.
How to Order Barbeque Catering
How do I order barbeque and sides for my group of xx? We thought we’d write up a little primer on ordering meat, sides, and dessert for your next company get together or family reunion. It’s not as hard as it sounds – the most important thing to know is an accurate number of guests you’re planning on feeding. On more than one occasion we’ve had folks who have over-ordered, and under-ordered because they didn’t request RSVP of their event’s attendees.
Ordering BBQ catering for a group in Corpus Christi is easier than you think. Whether you’re hosting a company lunch, family reunion, or special event, the big question is always how much food to order. From slow-smoked brisket and sausage to classic BBQ sides like potato salad and beans, plus sweet tea and homemade desserts, we’ll walk you through how to plan the right amount so everyone at your gathering leaves full and happy.

Ordering BBQ for a crowd doesn’t have to be complicated. The key is knowing how many people you’re feeding. Here’s a simple guide to help you plan.
Step 1: Count Your Guests
Always confirm headcount with RSVPs (mail, online services like Evite/Eventbrite, or phone).
Add a 10% buffer to cover no-shows and surprise guests.
For kids under 12, count 2 children as 1 adult.
Step 2: Meat Portions
Plan ⅓ to ½ pound of meat per adult (total, not per meat).
For ribs, use the higher end (½ pound).
Quick math:
Guests × 1.1 (buffer) ÷ 3 = minimum pounds of meat
Guests × 1.1 ÷ 2 = maximum pounds of meat
Step 3: Sides
1 gallon of sides per 10 guests (that’s 4 quarts).
Limit to 2–3 side options to avoid running out of favorites.
Quick math:
Guests × 1.1 ÷ 10 = gallons of sides
Multiply by 4 for quarts
Step 4: Beverages
Minimum: 1 gallon of tea per 10 people
Recommended: 2.5 gallons per 10 people (average guest drinks ~2.5 cups)
Pro Tips
Have volunteers serve portions until everyone has eaten once.
Bring ice chests to keep food hot for hours.
Brisket is usually packed uncut to stay moist—ask for a quick cutting demo when you pick it up.
Taste BBQ from different places before booking. Check what’s included (sauce, pickles, bread, utensils, etc.).
